Normandy Style Chops - Serves 2
Ingredients:
2 x 90g lamb, veal or pork chops (fat removed) 1 large apple, cored and thickly sliced 1 chopped onion 30ml (2 tbsp) flour 5ml (1 tsp) low-fat margarine 250ml (1 cup) cider or vegetable stock salt and pepper Method:
# Preheat oven to 180°C. # Brown chops in margarine and place in casserole dish. # Cook onion until tender in same pan as meat. # Add a small amount of cider/stock if necessary. # Stir in flour and cook a few minutes before blending in cider/stock. # Cook until thickened. # Season to taste. # Add apple to meat in casserole and pour in onion mixture. # Cover and cook for 40 minutes.
